Soft Pretzels

Enjoy these pretzels one delicious bite at a time.  Serve with nacho cheese.  These pretzels are a light, puffy bread sprinkled with salt.  It's the perfect salty snack!

1 Tbsp yeast
2 Tbsp brown sugar
1 tsp salt
1 1/2 cups warm water (110 degrees F)
1 cup bread flour
2-3 cups all-purpose flour

2 cups warm water (110 degrees F)
2 Tbsp baking soda

In your Bosch, dissolve yeast and brown sugar 1 1/2 cups of warm water.  Let sit for 2 minutes.  Add bread flour and salt, stirring the Bosch constantly.  Slowly add in all-purpose flour until dough is forming a nice ball of dough.  Knead the dough with the Bosch for 5 minutes.  Allow it to rest for 5 minutes.  Divide dough into 8 pieces.  Roll the dough into long strips about 1/2 inch thick and 18 inches long. Cut dough into bite-sized pieces.

Mix 2 Tbsp of baking soda in 2 cups of warm water.  Dip dough pieces in the baking soda water.  Remove the dough pieces and place on a baking sheet covered with a silicone baking mat.  Leave a little space between each piece of dough.  Sprinkle pretzel salt on the dough pieces.

Let dough rise 20 minutes.

Bake 450 F for 8 minutes, or until golden brown.

*You could also skip the salt and brush butter, cinnamon, and sugar on the pretzel bites for a sweet treat.
