Stuffed French Toast with Fresh Strawberry Sauce

This French toast is almost like eating a dessert for breakfast! When you put the cream cheese and strawberry sauce on this French toast, it's a special treat!  

French Toast

Lightly Blend:

4 eggs
1 cup milk
1 Tbsp. sugar
dash of salt

Pour in shallow dish.  Dip bread in egg mixture.  Cook on griddle until lightly browned and egg is cooked.  Turn over to cook other side.  

Cream Cheese Filling
8 oz cream cheese
3-4 Tbsp powdered sugar

Microwave cream cheese just until soft enough to stir easily with a spoon. Stir in powdered sugar until it is sweet to your liking. 

Spread a layer of cream cheese mixture on one slice of french toast and top it with another piece of french toast. Serve warm with fresh strawberry sauce (or a jam of your choice).  

Fresh Strawberry Sauce
1 lb fresh strawberries
3-6 Tbsp sugar (depends on how sweet your strawberries are)
2 tsp lemon juice
Wash and chop strawberries.  Add to a saucepan with sugar.  Gently mash the strawberries with the sugar and lemon juice.  Cook over medium heat until it comes to a boil.  Stir for two more minutes and remove from heat.  Serve warm over French toast.  Store leftovers in the fridge.
