Waffles

 These waffles are so puffy that when you cut them it's like cutting a marshmallow with a golden crust. It's the perfect breakfast for a birthday or really any special day.  We like to use a Lego or dinosaur waffle iron for added fun! 


3 cups all-purpose flour
1 cup cornstarch
2 tsp. baking powder
1 tsp. baking soda
2 tsp. salt
6 tsp. sugar
2 cup milk
1 cup Greek Yogurt
1 cup Greek Yogurt
1 1/3 cup vegetable oil
4 large egg, lightly beaten
3 tsp. vanilla extract
 
In a medium mixing bowl, combine the flour, cornstarch, baking powder, baking soda, salt and sugar.  Whisk together to blend.  

In another mixing bowl, beat together the whole milk, whey, greek yogurt, oil, egg, and vanilla.  Add the dry ingredients to the bowl with the wet ingredients and whisk just until incorporated and few lumps remain.  

Preheat a waffle iron.  Fill waffle irons and cook according to the manufacturer’s instructions.  Cook until crisp and golden.  Serve immediately.

*We like to serve our waffles with Nutella, fresh strawberries, and whipped cream.
